Vegan Salami

Little shmoo had fun this morning cutting shapes out of vegan salami with cookie cutters. I packed them up with smoked almond rice crackers, easy potato salad (new potatoes, vegenaise, mustard, and capers), watermelon balls and grapes, and some whole wheat chocolate chip cookies.
Verdict: Although I have doubts about the health-giving properties of vegan salami, it was quick and easy and he loved it. Sadly, he was playing with another boy at lunch and spilled most of his fruit salad. Only one bite of potato salad was left in his lunch box. 3 stars.

Ack! You're already getting spam on this blog?!? Sheesh.

I am going to keep my eyes glued on this blog....and perhaps put it in Hibi's favorites too, and tell her she needs to look at it! She gets stuck in this rut of what to eat.....she'll end up eating plain pasta with olive oil and salt for lunch, which of course has almost 0 nutrients when we're talking about white pasta.

Thanks for the ideas, Jennifer!

Hey...vegan salami is at least better than regular salami. You're a step ahead already. :) KEEP POSTING THOSE PICS!!! I adore this site. :)

I love the lunch box. It makes me think that if we all had one and I packed it in the morning, we'd eat better.(-:

I can't help but also notice the colors in your lunches are awesome as well.

I'm forwarding the link to this blog to my mom, hoping she'll get jealous and buy me one of these sweet lunch boxes and pack it with such a fantastic lunch as little shmoo gets.

(It doesn't matter that I'm 28, right?!)

i cook many vegan dishes for my neighbours who are vegan. you might find interesting some of my recipes. they are written in Italian but if you fancy the look of any of them i could translate the recipe :) maybe little shmoo will like the green tea cookies :)

You have really inspired me. I got some reusable containers for the kid's lunchboxes, and got a whole bunch of supplies...GOOD food, not processed crud. For their first day at junior high tomorrow, they're having baby carrots with dill dipping sauce, rennet free cheddar cubes (we're ovo-lacto veg), whole wheat crackers, raisins, organic bananas, and apple juice. When I told them what their lunches were they stared at me in shock and said, "You're packing us real food? We don't have to eat cafeteria crap? Cool!" I even bought them thermoses so they can take miso broth with tofu cubes and seaweed on Wednesday. My son was especially excited about the bag of edamame I bought...he loves it, and it never occurred to me that you could pack it in a lunch! Silly me. I will be checking this site every day for new ideas. YOU ROCK!

What kind of vegan salami is it? I know Bryanna Clark Grogan has a recipe for it, but I haven't tried it yet.

It was storebought vegan salami, I think the brand is Yves? I bet Bryanna's is great, I love her recipes.
